At a recent wedding held at a nearby state park, a few things had to be problem solved, including the wedding cake! A wedding coordinator turned pastry chef was a memorable event for us.
A beautiful October day brought together family and friends to celebrate yet another Hawaii Wedding. The weather was warm, the sun was out, and set up was going smoothly. All family and friends were traveling from the other side of the island, and a special delivery was being made to the wedding venue: the wedding cake (or cakes, we should say).
For this bride and groom’s special day, the grandmother’s on either side of the family were asked to bake up some special recipes for their celebration dessert, and when we heard that was the plan for the wedding cake, we were thrilled. To our surprise however, upon the delivery of the cakes, there were 6 total cakes(!), versus the one or two we were expecting. They had been in a long car ride from town, so we rushed them to the refrigerators in the back.
Several hours had passed, and the reception was kicking off with a bang! Live music, open bar, and great food. One of our coordinators took this opportunity to go check on the cakes in the back, as we were asked to simply decorate the cakes with a couple extra flowers before bringing them out. To our horror and shock, upon opening the cake containers, many of them had melted during the ride over, and the frosting had solidified in a creamy lake around the edges and cake board.
We alerted the grandmothers of the situation, but they all kindly laughed, and decided it would taste delicious either way. The couple was truly thankful that they made the gesture to take part in such an important part of their wedding, so were not concerned with the look.
Well, one of our coordinators went to culinary school and studied baking and pastry, so she was all too familiar with frosting cakes. Seeing what had happened, she knew she could help! With only a butterknife to work with, she went into the back and re-sculpted ALL six cakes, with just enough time to get them out onto the cake table for the guests to see. The grandmothers were thrilled, and the guests (and couple for that matter), had no way of knowing what had actually happened back in the kitchen. All the cakes were devoured, and the night went on as smoothly as it had begun!
